Here's one you can try right now, Jim's famous Healthy Meatloaf. Jim McCauley's Healthy Meatloaf Servings: 6 Preparation Time: 30 minutes
Preheat oven to 350 degrees. Heat medium skillet. Spray with cooking spray, then add touch of oil. When oil is hot, add onion, carrot and celery. Cook for ten minutes, stirring occasionally. Add garlic, cayenne pepper, thyme, parsley. Remove from heat and allow to cool. In food processor bowl, combine spinach with eggs (whole and white), salt, yogurt. Process until well combined. Add oatmeal, and pulse until combined. In large bowl, combine ground meats (you can use any ground meats you prefer, just make sure they are lean!). Add mirepoix (carrots, onion and celery) to meat. Add spinach mixture to meat. Combine well. (I use my clean wet hands but you can use whatever you prefer – just make sure it’s well mixed.) On a cookie sheet, free form the meatloaf. (Place on foil if you hate washing dishes!) It should be about five or six inches wide, three inches tall, as long as it makes. This gives lots of surface area – so lots of crunchy juicy bits of meatloaf! Bake in oven until internal temperature reads 160 degrees, which usually takes about an hour. (Cooking time depends on the temperature of the ground meats and the height of the loaf.) Remove from oven and let rest for 15 – 20 minutes before serving. Note: If you must glaze with ketchup, go ahead! Adding 4 T of ketchup, painted on the top of the loaf, is traditional in many households. This will add 15 calories, and 4 grams of carbohydrates per tablespoon (or use one of the newer low-carbohydrate ketchups available.)
